baby bonnets & rainbow salad, interesting combination!

Rainbow Chicken Salad…now I am NOT becoming one of those hipster foodies snapping photos of dinner…I just find this salad rather attractive and wicked YUMMY! I think my culinary forte is salads!

Rainbow Chicken Salad

 

Ingredients:

1 package Wacky Mac rainbow rotini

½ pound chicken breast cooked, cooled and chopped

½ pound grape tomatoes, red or yellow (½ of each would make the rainbow brighter)

½ pound grapes washed and quartered green or red seedless (again half of each would look fabulous!)

1 leek or 1 bunch of green scallions washed and chopped tiny

½ cup to ¾ cup Miracle Whip (love that tangy zip!)

2 tsp fresh dill weed

2 tsp chopped parsley

Lowry’s season salt to taste

 

Make it baby!

 

Cook up the pasta as directed on the bag, rinse in cold water.

Mix all the chopped up yumminess in a big mixing bowl…dump in the miracle Whip, mix in the dill weed and parsley…once everything is looking wicked tasty taste it and add the season salt to make it a bit yummier! This amount of noms should feed a family of 4 for 2 meals or be fabulous at a picnic or pot luck…remember to refrigerate until you’re ready to serve!
