Beer Cheese Soup

Note: when you cook said beer all the alcohol content goes up in steam…this is definitely not a light soup…thick hearty…not very healthy…but super yummy and will stick to yer bones…good for winter noms!

One 12 ounce can of beer, pilsner or light ale I used Budweiser, no idea how this would turn out with a dark beer…

Three 10 ¾ ounce cans condensed cheddar cheese soup

One 14.5 ounce can of no salt chicken broth

8 ounces heavy whipping cream

12 ounces frozen mixed veggies

½ small white onion diced

14 ounces of quartered small red skinned potatoes, leave the skin on

8 ounces sliced mushrooms

8 ounces baby carrots

Dump everything into a large crock pot and put on low for about 8 hours or until potatoes and carrots are done to your liking.  This amount of soup will feed 10 for one meal or 4 for a few meals.  Very yummy with buttered toast squares or garlic bread!

Bean & Ham Soup

Perfect for using up those left overs or using ham steaks!

½ pound smoked ham cubed (smoked ads all of the flavor you’ll need)

2 – 26oz. unsalted chicken stock

1 – 15oz Great Northern Beans rinsed (adequate or okey dokey beans work too)

1 – 12oz petite carrots

1 – 4ox packet of onion soup mix

¼ cup frozen spinach

1 tablespoon parsley

8oz fresh sliced mushrooms

Dump everything unceremoniously into the crock pot; oh you can ad a little ceremony if you must.  Stir well.  Simmer in crock pot for at least 8 hours on low or until carrots are tender.  The second day of this soup is the best!

This amount will feed quite heartily a family of 4 for 2 meals. Is extra yummy with grilled Swiss cheese on 7 grain bread!

Monkey Goulash and Kiddles

Thirty…30…little empty minded yet sighted sock monkeys laying on the floor…

started out with 6 chopped up pairs of socks and before long I had chopped up just about ALL the knee highs and over the calf socks I had in my bin-o-leg-wear-4-beasties…now all I have to do is stuff them, adding a squeaker or rattle to most, sew on the appendages and squashy mouths, embroider some lips…add the needed buttons, pom-poms and ribbon…then WA LA…many a box of sock monkeys to send to Operation Sock Monkey…there may be a few left over for assorted gift giving…so be ready to get a monkey this year! Whew 30…September 9th 2012

OK I’m not Hungarian, and have never encountered a recipe for realistic goulash, so here’s my approximate contemplation of not even close to the real thing!

2 pounds 93% lean ground beef

1 pound sliced mushrooms

1 small onion chopped

1 celery heart chopped

Simmer all of the above until the beef is browned through, drain off grease.  Add to the below in 1 big crock pot set on low:

2 jars 23.75 Prego chunky garden combo spaghetti sauce

1 can 14.5 ounce stewed tomatoes

1 can 2.25 ounce sliced black olives, drained

¼ cup frozen spinach

This will be very soupy to start with…

Simmer for 8 hours in the crock pot set on low, stir hourly, watch for scalding

When the mushrooms are totally done and yummy, boil a box of rigatoni according to the box, drain off water, do not rinse, stir into meaty sauce mixture in the crock pot.  Serve with a dash of parmesan cheese…have an extra jar of spaghetti sauce on hand if you’re going to make this batch last more than one meal…the pasta will tend to dry out the sauce in the crock pot.

This massive amount will feed a hungry family of 4 for 2 meals.

Chili, Cow Nose, painted gator, THREAD!!!

Cheater’s Chili

For when you want yummy chili but have no seasoning abilities…

1lb low fat content ground beef

1 yellow pepper (like the color)

1 lb of sliced mushrooms

2 cans 15.5 oz. Bush’s Best Chili Magic chili starter, these come in many heat strengths

1 can 15 oz Bush’s Best Black Beans

1 can 15 oz crushed tomatoes

1 can 14 oz dices tomatoes with onions

1 can 28 oz stewed tomatoes

The frappe’

Wash and chop up the yellow pepper

Brown the beef with the chopped pepper and the mushrooms

Drain grease

Open all the cans

Rinse off the black beans with cool water

Dump EVERYTHING into the crock pot

Turn on crock pot low for at least 8 hours, stir occasionally…keep an eye out for scalding, could just be my crock pot but about 7 hours in I need to put it on warm rather than low so the chili doesn’t burn onto the sides…

Feeds a family of 2 for 2-3 meals.

For added rather unhealthiness ass sour cream and shredded cheddar…mmmmmmmm…way too yummy!
